Millet is a gluten free ancient grain—actually a seed—that cooks quickly and has a pleasantly mild, slightly sweet flavor. It’s perfect for whole grain salads and is a delicious alternative to rice in pilafs or stir fries. One of our favorite Grains of Discovery!
Whole Grain Hulled Millet
A group of highly variable small-seeded grasses, widely grown around the world as cereal crops or grains. The naturally hard, indigestible covering is removed so it is ready for consumption. Once out of the hull, millet seeds resemble tiny yellow beads with dark dots on the side. Millet is a rich source of protein, dietary fiber, several B vitamins and numerous dietary minerals, especially manganese.
